An early harvest extra virgin olive oil that comes from a selection of the best olive trees of Jaén, picual variety.
Harvesting takes place between mid-October and early November, looking for the optimum point of ripeness of the fruit. It is done in an artisanal way and with great care, without damaging the olive and the fruit, preventing it from falling to the ground and arriving intact at the mill. Through mechanical and cold extraction procedures, in a few hours the precious juice is obtained. Filtering is carried out so that no deposits are produced in the bottle and alter the organoleptic properties of this precious oil. This juice is stored in stainless steel tanks with nitrogen, so that its properties are kept intact, and that is why it is packaged on demand.
Notably, in order to obtain a liter of extra virgin olive oil, an early harvest requires 7-8 kg of olives, in addition to a more delicate and laborious process than to obtain a normal extra virgin. That is why it is a very exclusive and limited edition product.
Limerencia is an extra virgin olive oil, early harvest of high-end, very soft and aromatic. You will perceive aromas of fresh grass, tomato, almond and green banana. Very pleasant notes of bitter and spicy that are perfectly balanced with its great fruity flavor.
